INGREDIENTS*
2 cups Almond Flour
2tbsp Coconut Flour
1/2 cup Erythritol (or more according to taste)
2 tbsp Baking Powder
1/3 cup Cocoa Powder
2tbsp Butter (or Coconut Oil) warmed up to liquify
5 Medium Eggs
250ml Double Cream (or Nut Milk or Coconut Cream)
1/3 cup Sugar-Free Raspberry Sauce (check out my 5-min recipe here)
1 handful Raspberries (approx. 60g)
1 tbsp Sugar-Free Vanilla Essence

PROCESS
- Preheat oven to 150C/300F
- Butter your pan and line with baking paper
- Mix the eggs, sweetener and butter/oil
- Add in the baking powder and coconut flour to the mixture
- Then start adding the almond flour
- Pour in some of your cream/milk to maintain a smooth and creamy consistency whilst the batter is mixing
- When mixed well split the batter into three by scooping 1 1/2 cup of the batter for every taste, remember to leave enough from the original batter for your vanilla layer.
- Mix the first 1 1/2 cup of batter you removed with the cocoa.
- Mix the second 1 1/2 cup of batter with the raspberry sauce. Add food colouring if you wish to have brighter coloured layers.
- Pour into the cake pan by layering the different colours one after another.
- Bake for 70 to 90 minutes or until a toothpick comes clean out of the centre of the cake.
- Leave to cool in the pan for 10 mins then removed and leave to cool on a rack for another 30-60mins.
- Cut and serve with more cream or enjoy plain with tea and coffee.
- The cake should keep well for about 5 days but I doubt you will have any left after day 2!
